Sarah Kay Cooks: Zucchini Boats

Zucchini Boats

Ingredients:
3 medium sized zucchinis
1 jar of tomato sauce
1 pound of ground beef (or ground turkey)
onion (as much as you prefer to put in the beef)
garlic or garlic powder
salt and pepper to season
1 bag of mozzarella
Parmesan cheese

Instructions:
1. Preheat the oven to 375 degrees. Measure out 1 cup of the sauce and set aside.
2. Trim the ends of the zucchinis and slice in half, lengthwise. Use the tip of a spoon to scrape out the zucchini flesh. Place the zucchini boats into a 13x9 baking dish and add about 1 inches of water. Cover with foil and bake in preheated oven for 20 minutes, until just about fork-tender. Remove from oven, and set aside to cool for a bit.
3. While that is in the oven, add the beef to a skillet over medium heat. Add the onions and seasonings. Continue to cook and stir. Drain the grease. Return to heat.
4. Add the remaining tomato sauce from the jar to the meat mixture. Stir and and let simmer for 15 minutes.
5. Remove the partially cooked zucchini from the dish and pour out the water. Pour the reserved cup of tomato sauce into the empty dish and put the zucchini boats on top of the sauce.
6. Divide the meat filling between the zucchini boats. If there is extra, spoon it around the boats. Cover the dish with foil and bake for 20 minutes. Remove from the oven and then set to Broil on high.
7. Remove foil and sprinkle the boats with mozzarella cheese and Parmesan. Place the dish back in the oven for about 3 minutes or until the cheese is melted and golden brown.
