Sarah Kay Cooks: Cinnamon Almond Pancakes

Cinnamon Almond Pancakes:

Ingredients:
2 large eggs
1/3 cup milk or coconut milk
1 teaspoon vanilla extract
1 ¼ cup almond flour
¼ teaspoon baking soda
Pinch of salt
Butter to grease the pan
Cinnamon to your taste

In a large bowl, mix the eggs, the milk, vanilla and then add the flour, baking soda and salt. Stir with spoon until combined.

Coat a large skillet with the butter over medium high heat. Drop about ¼ cup of batter in the skillet. Cook until it bubbles and then flip. Cook about 2 minutes. I decrease the heat to low at this time to not burn the pancakes.

Wipe the pan, add more butter and repeat. This recipe makes about 6 pancakes, so 3 servings of 2 pancakes and is about 11 to 12 carbs per serving.

You can add blueberries instead of cinnamon. Add syrup and enjoy!
