I found a new recipe and I tried it out yesterday: Stuffed Zucchini Boats. It was a total success. I loved the meal as did the Warren! It was super easy to make and it is super delicious, healthy and low carb. I am remaining on the straight and narrow- that is the goal for 2020, with my healthy eating and this recipe was a home run and I will use it again.

I did not have a red pepper, so that was missing. I used a tomato sauce with mushrooms and no bread crumbs to remain lower carb.
